Freezer corn

Sunday at church I mentioned to a friend (Marlys) that I was going to hopefully do corn this week. She offered to help. I smiled at her and thought what a nice offer, you're crazy. Then Marlys called this week to offer her services again. SO this time I took her for serious. Any of you that have put corn away in the freezer, know that it is A LOT of work. Shucking it, cleaning it, cutting it off the cob, cooking it, then the blessed clean up. It is a whole day affair. I was absolutely blown away to have a new friend offer to come help me. Esp. a friend with 2 small children. So yesterday was the day. Donovan was home for a little, and snapped a picture of us hard at work. Also enjoying getting to know each other, we never run out of things to say.











Always on a day like this, I get a little panicked to think of what will happen with trying to do a big project like this with my 4 children. And you know what? I had nothing to worry about. Adding 2 new children to the picture, entertained my children completely. I came in the house to find this in the first hour. It just made me happy that they had found so many things to keep them all entertained. Marlys has a little 4 year old, Jade, that is the above picture.




She also has a little 2 year old, Camden that got along well with Suzy.




And oh all the fruit of my labors.....Fresh corn that we will enjoy all winter.





Unless my kids eat it all before fall is over. They all begged for a bowl of corn while I was putting it into freezer containers. Jack had 3 bowls. Isabella asked for seconds. They all love it.
Here is the recipe I got from an Amish friend of mine.
Freezer Corn
8 cups of corn
2 tsp. salt
2 Tbs. sugar
1 1/2 cups water
1 stick butter
Stir together and bring to boil. Cook for 5-7 minutes. Remove from heat and put corn in bowl. Put that bowl in sink with ice water, to cool. When cool, put into containers and freeze.

Looks like fun Heather! Mom and I did corn this week too but we have never tried it like that. Maybe another year we will.

You make me tired! I'm in the middle of getting ready for a baby shower (at our house), with a short trip to a birthday party (somewhere else) between now and then. I'm just thanking God that my corn is already in my freezer.

Sounds like a fun day. My cousin Mary blogged about the same thing this last week. I ate some over the weekend, and it was delicious!

I talked to Marlys tonight and she told me what fun she had helping you with the corn. I have to admit...I was jealous. I wish we could've added 2 more kids to the mix and that I could've been there too. Maybe next summer.... ;)
