This recipe came from a cousin- Joyce. Mmmmmm delish!
It comes right off the back of the bag. Before I made these I had never heard of Cinnamon Chips. But friends you are missing out if you have never bought these, because again....Delish. You can find them at your local mega store right next to all your other chocolate chip varities.
Oatmeal Cinnamon Chips Cookies
1 cup (2 sticks) butter or margarine, softened
1 cup packed light brown sugar
1/3 cup granulated sugar
2 eggs
1-1/2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
2-1/2 cups quick-cooking oats
1-2/3 cups (10-oz. pkg.) HERSHEY'S Cinnamon Chips
3/4 cup raisins
Directions:
1. Heat oven to 350°F.
2. Beat butter, brown sugar and granulated sugar in bowl until creamy. Add eggs and vanilla; beat well. Combine flour and baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips and raisins (batter will be stiff). Drop by heaping teaspoons unto ungreased cookie sheet.
3. Bake 10 to 12 minutes on until lightly browned. Cool 1 minute; remove from cookie sheet to wire rack. About 4 dozen.
The first time I made these I used butter and they were a good flavor...but came out flat as pancakes. So after taking to Joyce she advised to use Crisco. They came out perfect.

Are they fat free?...I am assuming the answer to that is yes!! (: I don't want to know otherwise!!! (really...they look good, but I will allow whoever is next to take mine....would hate for you to have to mail them to me!!!) THEY LOOK DELICIOUS!!! LOL

But maybe I should apologize for not bringing you whoopie pies before I beg for these cookies, huh?! I'm home right now! But I might leave about 10:00pm (yup you read it right) to meet my college-evening-begins-at-10:00pm daughter for coffee. (decaf of course!) And I've got 4 whoopie pies left, just a little dried out. Kim....I have to confess I copied the photo off of the Hershey's website that has the recipie also. I only wish I could take a picture like that.
Cindy....Don't worry Kim only got 1/2 a dozen and Bobbie got the other 1/2. And you I agree that Kim can be pretty tricky. And by the way I will trade you cookies for whoopies...but they must be fresh...not dry and crusty.
Rosetta....Yes, You should have stopped in for fresh cookies that day. Because now they are all gone. :(
